Homemade Sauce
Ingredients:
1 large can (680g / 24oz) of tomato puree
1 can (156g / 5.5oz) of tomato paste
1 can (398g / 14oz) of diced tomatoes (optional with chilies)
1 white onion (optional)
1 green, yellow, or red pepper (optional)
Season to taste. Here’s my go-to mix: salt, pepper, oregano, marjoram, basil, bay leaf, garlic, red pepper flakes, and chili powder.
Meatballs
Ingredients:
1kg (2.2lbs) of ground beef (or a pork and beef mix)
40g (⅓ cup) of crackers, hand-crushed
1 egg (or a little extra milk if you’re out of eggs)
2 tbsp (30ml) of whole milk
35g (⅓ cup) of grated parmesan cheese
40g (⅓ cup) of diced mozzarella cheese
15g (1 tbsp) of beef bouillon
1 tbsp salt
1 tbsp pepper
1 tbsp garlic (optional)
1 tbsp oregano (optional)
Instructions: Making the Sauce: In a large pot, combine the tomato puree, paste, diced tomatoes, and seasoning. Mix well and set aside. If using onion and pepper, dice them and sauté in a pan until semi-translucent. Then, add them to the pot and stir. Let the sauce simmer on low heat for about 30 minutes, stirring occasionally.
Making the Meatballs: In a large mixing bowl, add the ground meat, seasoning, egg, milk, and crushed crackers. The cracker pieces should be small—nothing bigger than a 2x2 Lego piece! Hand-mix until the texture is tacky but not dry. If it’s too dry, add a little more milk. Roll into 3.8cm (1.5-inch) balls and set aside. Heat a frying pan with butter or oil of choice. Brown each meatball on all sides. Once browned, add them to the pot of sauce, ensuring they’re submerged. Cook on low heat for 40 minutes.
Smother in cheese and serve over pasta, rice, Italian bread, or enjoy them on their own for a protein-packed feast! 🐷
