I meant to make a video, but I forgot because of how many timers I had going on my phone to get these seared + cooked to perfectionnnn. For anyone wondering about the specifics of how this perfect meat was created: I used pink Himalayan salt to brine the exterior and let sit for about an hour with some time in the fridge. After it cooled to bear room temp, I pan-seared each side for 2 minutes and immediately through them into the oven at 415 degrees for 4 minutes to get a delicious medium-rare.
