Ingredients:
3-4 lb beef chuck roast
1 onion, sliced
4 garlic cloves, minced
4 medium potatoes, peeled and chopped
4 medium carrots, peeled and chopped
1 cup beef broth
1 cup red wine
2 tbsp olive oil
1 tbsp tomato paste
1 tbsp dried thyme
1 tbsp dried rosemary
1 tsp salt
1/2 tsp black pepper
1/4 cup THC-infused olive oil
Instructions:
Preheat the oven to 325°F.
In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat.
Sear the beef chuck roast on all sides until browned. Remove from the pot and set aside.
Add the sliced onion and minced garlic to the pot and cook for 2-3 minutes, until fragrant.
Add the chopped potatoes and carrots to the pot and cook for 5 minutes, stirring occasionally.
Add the tomato paste, dried thyme, dried rosemary, salt, and black pepper to the pot and stir to combine.
Add the beef broth and red wine to the pot and bring to a simmer.
Return the beef chuck roast to the pot and spoon some of the sauce over the top.
Cover the pot with a lid and transfer it to the preheated oven.
Bake for 2-3 hours, until the beef is tender and falling apart.
Remove the pot from the oven and let it cool slightly.
Remove the beef from the pot and shred it using two forks.
Add the THC-infused olive oil to the pot and stir to combine.
Return the shredded beef to the pot and stir to coat it in the THC-infused sauce.
