

Winter in the vineyard is beautiful in its own way. After harvest, and as temperatures start to drop the vines begin to store carbohydrates in their trunk as energy reserves to help them break bud the following spring. Once the leaves have fallen off, the vines go into a state of deep dormancy, which helps protect against winter damage from extreme temperatures. This is a critical time in the vineyard, allowing the vines a chance to rest from the busy growing season and prepare for the upcoming vintage.
