They take advantage of the indigenous yeast populations that exist out in the vineyard and come into the winery on the grapes. The yeast will kickstart the fermentation, and if handled properly can go the distance until all of the sugars are turned into alcohol. A lot of producers will “pitch” in commercially produced yeast to take over the native yeast so the fermentation is strong, with less risk of it going sideways.
